(Quantity - 1 loaf)
Ingredients:
Refined flour - 1.25 cups
Powdered sugar - 0.75 cup
Butter/oil - 0.25 cup
Buttermilk - 1.5 cup (or as required)
Baking Powder - 1 tsp
Baking soda - 0.5 tsp
Vanilla essence - 3-4 drops
Juice of 1 big lemon
Juice of 1 lime
Zest of 1 lemon
Zest of half a lime
For the glaze
Confectioners’ sugar - 0.5 cup
Lemon/lime juice - 0.25 cup
Slices of lime for garnish
Method:
Mix together butter and powdered sugar. Cream the mixture using a hand blender or an electric blender, about 5 minutes.
Add in Vanilla essence, lemon juice, lime juice, and the zest.
Sift in baking powder, baking soda, and half of the refined flour. Mix it gently using the cut and fold method. Do not overmix.
Add in the buttermilk and the remaining flour. Add more buttermilk if required to get a pouring consistency.
Pour the mixture into a greased & floured cake tin and bake in a preheated oven at 180C for 40-45 minutes.
Check by inserting a toothpick in the center. If it comes out clean your cake is done.
Once the cake is cooled, transfer it to a serving tray. Mix the ingredients for the glaze, and pour it on the cake using a spoon. Let it drop on the sides.
Garnish with fresh slices of lime and enjoy!
